Strawberries aren’t just for shortcake

That’s what it says on the inside cover of the Old Fashioned Strawberry Recipes by Bear Wallow Books. My sweet friend who owns a corn-dog stand (yes, you read that right) gave me this book. She found it during her COVID-19 Quarantine clean out. Most noteworth, she said that her Uncle and Aunt owned a strawberry farm at the time this book was printed. They were nice enough to share the book with her. When it resurfaced, she thought of me and knew I had to have it. So here I am, baking, binging and blogging my way through it. We’ll start with a recipe for Old-Fashioned Strawberry Bread.

Certainly I’m excited that this book touches on everything from breads & breakfasts to soups, salads & side dishes. Not to mention beverages and strawberry favorites. Hang on folks because we’re about to dive into a world of strawberries. Finally onto the good stuff.

Old-Fashioned Strawberry Bread

As a result, it seems like the best thing to do is to start at the beginning, the very first recipe in the book for old-fashioned strawberry bread.

Ingredients:

  • 1 3/4 cup sugar
  • 1 1/4 cups vegetable oil
  • 4 eggs, beaten
  • 2 10-oz. pkgs. frozen strawberries, or 2 cups fresh sliced strawberries, undrained
  • 3 cups unbleached flour
  • 2 Tbs. Lemon juice
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1 cup chopped nuts (I use walnuts)

Old-Fashioned Strawberry Bread

Let’s get started by mix 1 1/4 cup oil, 1 3/4 cup sugar and 4 eggs (beaten) together.

Next, add your 2 10-oz. frozen bags of strawberries and 2 Tbs. lemon juice.

Mixing the strawberries.

Next you’ll sift together 3 cups unbleached flour, 1 tsp. baking soda, 1 tsp. salt, 1/2 tsp. ginger and 2 tsp. cinnamon in a seperate bowl.

Then gradually stir dry ingredients into strawberry mixture. Mix thoroughly then add nuts. Finally, pour batter into two greased loaf pans and bake in 350 degree F. oven for one hour.

  • Add strawberries and lemon juice.
  • In seperate bowl sift together flour, soda, salt and spices.
  • Gradually stir dry ingredients into mixture.
  • Mix thoroughly. Add nuts.
  • Pour batter into two greased loaf pans. Bake in 350 degree F. oven for one hour.
