Brussel Sprouts and Bacon
I try to cook seasonally, and right now (end of October) Brussel sprouts are readily available at local farmers markets. My friend picked some up for me the other day at the market in West Bend and I couldn’t believe I got three stalks for $10!
Here is my absolute favorite (and easiest) way to cook Brussel sprouts.
1 pound fresh Brussel sprouts washed and cut in half
2 tbsp olive oil
Fresh pepper and salt
How to make:
Preheat oven to 375 degrees F. Toss prepared sprouts in a large bowl with olive oil, fresh pepper, and salt. Line broiler pan with aluminum foil and fill with sprouts. Place the top rack on and then line your bacon up on top.
The bacon fat will drip down into the sprouts while they steam and oh.my.word. It’s delicious. Roast for roughly 25-30 minutes. Checking halfway through. You don’t want your sprouts to get overdone but you don’t want them to be raw and crunchy.
When finished, you can chop your bacon and serve it with your sprouts or you can just eat it.
