According to the United States Department of Agriculture (USDA) Food Safety and Inspection Service, all produce should be washed before consumption under cold running tap water to remove any lingering dirt. This greatly reduces bacteria and foreign material that may be present on the berries. Follow these steps to wash your berries: Begin with clean hands. Wash your hands for 20 seconds with warm water and soap before and after preparing fresh produce. Cut away any damaged or bruised areas on fresh fruit. Produce that looks rotten should be discarded. All produce should be thoroughly washed before eating. Wash fruit under running water just before eating, cutting or cooking. Washing berries with soap or detergent or using commercial produce washes is not recommended. These products are not approved or labeled by the US Food and Drug Administration (FDA) for use on foods. You could ingest residues from soap or detergent absorbed on the produce. Drying berries with a clean cloth towel or paper towel may further reduce bacteria that may be present. Immediately refrigerate any fresh-cut items such as salad or fruit for best quality and food safety. We recommend a few different ways to store your berries, based upon how long you need to store them. For >2 days: After harvest, leave berries in the tray or container on the counter top unwashed. When ready to use, please make sure to wash them first. For >7 days: Immediately after harvest, cut the stems off the strawberries and place them (spread out) in an airtight container, lined with paper towel. When ready to use, please wash your berries before using them. For >60 days: Freeze your berries relatively soon after harvest. To freeze berries, cut off stems of strawberries, wash, allow to air dry on paper towel and then place berries on cookie sheets in the freezer. Flash freeze for 24 hours and then place in freezer bags. Enjoy for many, many months depending on space in freezer.
